Pablo fell in love with wine while pursuing a degree in Social Work back in Chile. Shortly after moving to the United States in 2006, Pablo took a long-distance program in winemaking from UC Davis. Although he was not certified from this program, this experience sparked his interest to become a Certified Wine Professional at the Culinary Institute of America in Napa Valley, California. He then pursued his certification as a Sommelier Level I and II from the Spanish Academy of Sommeliers, in Barcelona, Spain.
Since then, Pablo has been working as a Sommelier and Wine Professional in multiple restaurants and wine bars like Andres Bouchée in Carmel By the Sea, Rootstock in Cupertino, and Los Gatos. Pablo is the former owner of Bakai Wine Bar and Tapas (Downtown Monterey) and former Manager of Sangria Wine and Tapas Bar (Carmel Valley).
Pablo has taught wine in multiple locations throughout Northern California and the Central Coast, as well as working with different wineries throughout Monterey County (Carmel Ridge, Joyce Vineyards, & De Tierra). In 2013, Pablo, in conjunction with two other partners, organized Wine Stock SF in San Francisco with great success. Pablo is the author of a book dedicated to a wine called TASTE, The Secrets of Wine and Food Appreciation. He is the Founder of Monterey Wine School. Family brings Pablo to the Fresno area and he is now the new Wine Director for 13 Prime Steak.
